Nigerian chef sets Guinness World Record with biggest jollof rice dish

Earlier this month, Guinness World Records officially recognised Nigerian chef Hilda Baci for cooking the largest pot of jollof rice in the world.

It took Baci and her team nine hours to cook the rice in Lagos, the capital of Nigeria. They used a custom-made pot that was six metres wide.

Baci said it took about a year to plan the event. To cook the dish, she used about 4,000kg of rice, 600kg of onions and 500 cartons of tomato paste. Thousands of people cheered her on as she worked.

The well-known West African dish features rice cooked in tomato sauce, served with meat or fish.

There are different versions of it across the continent.

Today, there is a jollof rivalry, particularly between Nigeria and Ghana, which both claim they have the best recipe.
