Science activity: how to make butter from cream

Cream is made up of the butterfat layer which is skimmed off of milk before the milk is ready to drink. This cream can be separated into butter and buttermilk.

Recipe

Ingredients
Whipping cream

An airtight container

Directions
Step 1

Fill the container halfway with cream, and close the container tightly to stop any of it spilling out.

Step 2 Vigorously shake the container until you see a solid lump start to form in the container.

How it works

Heavy cream has a lot of fat in it, By shaking the cream, the fat molecules begin to separate from the liquid.

The more the cream is shaken, the more these fat molecules clump together, forming a solid which is the butter.

The leftover liquid, after the solid butter has formed, is called buttermilk.
